Last year, downtown Branford’s treasured Darbar went under new management. “But everything is the same,” assures managers Haresh Nariyani and Manju Shahani, and main cook and part-owner Pitambar Jaisi. Customers continue to flock from all over the state to taste signature dishes like the chicken masala (they can sell 50 plates of that alone on an average weekday, twice that on weekends). And no one need be afraid that the food will be too spicy: “We make it mild unless people say they want it hotter,” Nariyani says. “It all depends on what the customer wants. The main secret is the sauce — it’s the best sauce in all Connecticut.” Another secret is that the price is right — “Two people can eat nicely for $20 or $22,” Nariyani says. Darbar also does outside catering, including weddings, and has its own upstairs banquet hall. Why change a thing?
